Food Scientist and Manufacturing Systems Leader with 15+ years of experience across academia, international research institutions and multinational food companies.
Seth Graham-Acquaah is a Food Scientist and Manufacturing Systems Leader with over 15 years of experience spanning academia, international research institutions, and multinational food companies.
Dr. Graham-Acquaah holds a PhD in Food Science from the University of Arkansas, where his doctoral research led to the development of the Graham-Acquaah Thermal Exposure (GATE) value — a novel method for quantifying thermal exposure during rice drying and predicting its impact on end-use quality.
His research has been published in leading peer-reviewed journals and presented at major international conferences.
He has held leadership roles at Tyson Foods and Mars, Incorporated, overseeing thermal processing systems, strengthening regulatory compliance frameworks, and integrating digital analytics into HACCP-based governance.
Earlier in his career, he served as Laboratory Manager and Assisting Grain Quality Scientist at the CGIAR Africa Rice Center, contributing to international postharvest innovation and food security initiatives.
His scholarly interests include thermal processing validation, food safety systems modernization, predictive analytics in manufacturing, and sustainable grain value chains.
He is a Certified Food Scientist (CFS) and an active member of several professional scientific societies.
Head of Nutrition & Population Studies
Senior Lecturer at the Regional Institute for Population Studies, University of Ghana, specializing in population health, nutrition and demographic research.
Dr. Fidelia A. A. Dake is a Senior Lecturer at the Regional Institute for Population Studies, University of Ghana where she teaches postgraduate courses in statistics and demographic methods and supervises Masters and PhD students.
She holds degrees in Population Studies, Global Ageing and Policy, and Nutrition and Food Science.
She has held affiliations at the University of North Carolina at Chapel Hill, The Pennsylvania State University, Cambridge University, UNICEF Office of Research, the United Nations Economic Commission for Africa (ECA), and the United Nations Population Fund (UNFPA).
Her research intersects population health and nutrition outcomes, social determinants of health, urban health and international health interrelationships.
One of her current projects explores the use of digital communication to improve nutrition outcomes among rural poor households in Northern Ghana.
Her research has been published in high-impact journals including Public Health Nutrition, BMJ Open and Journal of Urban Health.
Dr. Dake is passionate about equipping young Africans with digital and analytical skills and serves as a co-organizer of the Summer Institute in Computational Social Science (SICSS).
She is a member of professional bodies including UAPS, IUSSP, PAA and the Agriculture, Nutrition and Health Academy.
